Just a few drops of this bright green mix on a cracker creates an unforgettable pre-dinner snack.
- 7g parsley
- 50g oyster meat
- 65g grapeseed oil
- 5ml lemon juice
- Salt to taste
- Place the oyster meat and the parsley into the blender and blitz.
- Once it is smooth, slowly and add the grapeseed oil while the blender is switched on, allowing the mix to emulsify.
- If it becomes too thick, add lemon juice in small amounts until it reaches the right consistency to drop onto crackers.
- Spoon a few drops onto crackers and serve.
