Recipe from Urbane: a sensational pre-dinner snack

Just a few drops of this bright green mix on a cracker creates an unforgettable pre-dinner snack.

Ingredients

  • 7g parsley
  • 50g oyster meat
  • 65g grapeseed oil
  • 5ml lemon juice
  • Salt to taste

Method

  1. Place the oyster meat and the parsley into the blender and blitz.
  2. Once it is smooth, slowly and add the grapeseed oil while the blender is switched on, allowing the mix to emulsify.
  3. If it becomes too thick, add lemon juice in small amounts until it reaches the right consistency to drop onto crackers.
  4. Spoon a few drops onto crackers and serve.
